Whitepeony
Pai mu tan, which translates literally as 'white peony tea', tends to cause confusion in the west. It is a pure tea from the Fujian province of China, and contains no peony flowers at all. The tea is made by gathering fresh white buds and drying them naturally, without any roasting or steaming. The withered buds look like dry flowers, hence the nickname.
White peony is one of the more desirable specialist teas, with a light, smooth flavour. Ours is certified organic by the Swiss IMO organisation.
